Beef Rendang

Ingredients A

1.5kg cubed beef

8 teaspoon oil

Ingredients B

150g galangal

8 stalks lemongrass

8 pips garlic

60g turmeric

80g dried chilies, soaked

160g shallots

8 candlenuts

Ingredients C

4 cups water

1 stalk toch ginger bud

1 pc turmeric leaves, shredded

5 pcs kaffir lime leaves

Ingredients D

4 teaspoon sugar

1 ½ teaspoon salt

200g toasted grated coconut

250ml thick coconut milk


1.     in a wok, stir fry ingredients B with oil till fragrant

2.     add cube beef and stir fry for a while

3.     add ingredients C, mix well and bring to a boil over high heat

4.     reduce heat and simmer for 25 minutes

5.     add ingredients D, mix well and continue to simmer till the beef is tender and the mixture is almost dry.
